ITS HOT! And not in a good way! I love to eat fresh and healthy foods that promote cooling down the body from the inside out. My delicious Zucchini Cucumber Noodles are amazingly yummy and easy to make. Its light, refreshing and makes me feel like I’m eating pasta when I’m not!
Ingredients:
Spiralize 3 Organic Zucchini and 3 Persian Cucumbers
1/2 cup of crumbled feta
1 cup of finely chopped cilantro
1/4 cup of crushed walnuts
handful of chopped kalamata olives
1/2 red onion- sliced thin
2 tablespoons of hemp seeds
Dressing:
1 whole juice of a lemon, olive oil, dijon mustard, splash of apple cider vinegar, splash of OJ and salt and pepper- whisk together
★ Toss it all together in a large bowl and enjoy!!!! And give a bowl to your neighbor, they will love you. ♡
